Hope you all are enjoying beautiful weather today! The sun is definitely out here in Nashville along with some monstrous heat. Lately, I haven't really been the type of person who can wake up and eat a meal. So, this morning I had a cup of Gloria Jean's Hazlenut coffee, thanks to my <a href="http://www.keurig.com/">Keurig</a>...if you don't have one of these and you drink coffee on a daily basis I highly recommend it. I do, however, still have my old coffee pot which I bust out occasionally when I buy some local <a href="http://www.bongojava.com/">Bongo Java</a> coffee. I typically drink my coffee black, unless I'm brewing up some Newman's Organic Extra Bold. In that case I usually add some <a href="http://silksoymilk.com/products/silk-creamer/french-vanilla">Silk French Vanilla Soy Cremer</a>. Alongside my coffee I had a homemade banana muffin (YUM!), which I will be posting about later today, and an orange.<br />

I find the heat seems to take my appetite away. However, today I did eat some pretty good food if I do say so myself. For lunch i made a chick'n caesar salad with some <a href="http://www.morningstarfarms.com/products_meal-starters-chikn-strips.aspx">Morningstar Farms chick'n strips</a> (my best friend and I have loved these since high school), a mixture of greens, and <a href="http://organicvillefoods.com/products/dressings/non-dairy-caesar-organic-dressing/">Organicville Caesar Dressing</a>. I would usually make my own dressing, but everyone I've talked to said to try the dressing so I picked it up on my last trip to Whole Foods. I can definitely say it's pretty realistic...it doesn't have that fishy taste, which is a plus. I also had a side of <a href="http://www.imaginefoods.com/content/organic-creamy-tomato-soup">Imagine tomato soup</a>...it wasn't to bad, but it was a bit bland for my liking.<br />

For dinner I cooked up a MASSIVE plate of steamed asparagus, which is one of my favorite foods. On top of that I had some quinoa and Whole Foods organic frozen vegan Spinach Florentine ravioli...which, is pretty realistic of the very non-dairy ravioli. I would definitely pick it up for a quick dinner, I would buy it again for sure. I went ahead and topped it with some Trader Joe's pasta sauce. <br />

Although the semester was extremely stressful and full of many sleepless nights I had some of my greatest memories of my college career. During April my bowling team made it to NCAA nationals and I'm proud to say that we ended our season with a 2nd place finish as well as getting to be on ESPN. I'm still pretty upset that we didn't win the whole damn thing, but after a long season of ups and downs we did amazing. I was also able to finish our semester of VIVA with an amazing event, a food screening of the film Food Matters, i didn't care for the film a whole lot, but it was a great way to get our discussion panel started on some great topics. I had surgery this past Monday and will get to stay in Nashville to rehab, but I'm glad that I now have a kitchen and can finally post my food delishness. I have some great plans for myself this summer as well as work I am doing in the Nashville community. I'm hoping by the middle of June I'll have a full-fledged website up and will get to gain some more followers. Well, I'm gonna take a nap after this long errand filled day but expect some great reviews and food posts in the near future.<br />

Factory Farming. I don't like it. Most of us vegans and vegetarians don't like it, and I'm sure a majority of meat eaters don't particularly care to watch the happenings that occur at these heinous places. At Vanderbilt I am a double major in Philosophy and Medicine, Health, and Society...so I thought it would be great to combine my love of philosophy with my love of animals and take our Animal Ethics course here at Vandy (taught by my favorite professor yet, Joan Forry). On Monday we watched the film <a href="http://www.hbo.com/documentaries/death-on-a-factory-farm/index.html#/documentaries/death-on-a-factory-farm/video/promo.html/eNpVzrEKwjAQxnFKIKCv4HKb+AoBB2lxlO6djuRqA0muxksxb68WRZw++A8-vm2rpsPiHfEpYajibctJ6CHqpnjPwX1zj1e6YCQ9dGxLpCSYPd0NdIQyASdAOKMVzvW1ORroM0fWOyzCc8B6lFxo0zTau3-A-YDxA4wrsN4yML+dJ3wvOzc=">Death On a Factory Farm</a> and for those of you who haven't heard of it or watched it check it out...it's pretty intense, but most of us have already seen some pretty graphic things. <br />

</div><div>Personally, I had a hard time watching some of it but what I really wanted to draw attention to was the fact that the people in these films truly had no remorse for their actions towards the pigs they were killing and beating. One of my biggest concerns with the meat industry is so many humans that work on these farms can be so terrible to other living beings and laugh while doing it. Yes, it makes me mad, but ultimately my strongest emotion I feel is sadness. It hurts my heart to know that there are people capable of injuring and mutilating non-human animals drastic ways, such as beating them with hammers and hanging them alive (these two are both depicted in the documentary). It only makes me wonder what these types of people would do to other fellow humans and what they are simply capable in general. </div><div><br />

</div><div>I wanted to make sure that I got this blog post up as soon as I got to school so I went ahead and tried every bar tonight. I can definitely tell you that I'll be going to bed happy tonight. These bars are AMAZING. I absolutely love the fact that they are made with a variety of ingredients...my absolute favorite ingredient being the rice-milk. The buccaneer bar reminded me of a milky-way and left a little taste of coffee in my mouth afterward (that may just be my own taste buds combined with my love of coffee talking). The Jokerz bar...reminded me of a snickers bar except BETTER. Twilight...was oh so delicious and was pretty much a combination of a twix bar and a girl scout Samoa cookie without the cookie part. Last but not least is my absolute favorite....the MAHALO bar. Oh snap was this baby good...It's just like an almond joy except naturally sweet and the almonds actually tasted real. </div><div><br />
</div><div>For those of you who still have yet to try a <a href="http://www.gomaxgofoods.com/index.htm">Go Max Go</a> product you need to...NOW. For vegans and those who are lactose intolerant they are God's gift to us. :] One thing that I really love about the <a href="http://www.gomaxgofoods.com/index.htm">Go Max Go</a> company is the fact that their products have no trans fat, no cholesterol, nothing artificial, and no hydrogenated oils....I do my best to stay away from these as much as possible as I think everyone should. When shopping for any candy bar <a href="http://www.gomaxgofoods.com/index.htm">Go Max Go </a>is the way to go...not only are they healthier for you but they taste so natural. I love the fact that I can taste every ingredient and the candy bars don't leave a waxy feeling in my mouth after I eat them. No matter if you just love chocolate or your a vegan I highly recommend picking some of these babies up for your dorm room (I know we all get those chocolate cravings from time to time). </div><div class="MsoNormal">As soon as we sat down I ordered a few cinnamon rolls, the mozzarella sticks, and a chocolate chip cookie dough shake. . . all of which were AMAZING.<span style="mso-spacerun: yes;"> </span>The <a href="http://www.chicagosoydairy.com/breaded_mozzarella_teese_sticks/">mozzarella sticks</a> were the highly sought after version made by <a href="http://www.chicagosoydairy.com/breaded_mozzarella_teese_sticks/">Teese</a> and let me tell ya; nobody lies when they say these are heaven.<span style="mso-spacerun: yes;"> </span>After we all scarfed down those some of my family members went ahead and ordered the seitan buffalo wings, the potato skinz, the chips and guacamole, and some more miscellaneous flavored shakes.<span style="mso-spacerun: yes;"> </span>Everyone loved the appetizers and I was so thankful they all weren’t grossed out by the solely veg food…it was great to see a family of people who never really eats outside their comfort zone support me and eat like me for a day, well meal.<span style="mso-spacerun: yes;"> </span></div><div class="MsoNormal"><br />
</div><div class="MsoNormal">Back to the food….so, personally, I have missed biscuits and gravy SO much.<span style="mso-spacerun: yes;"> </span>I never used to eat it with the sausage so it was always sausage-less but I still have yet to find a recipe for gravy that comes close. To fix this sadly missing aspect of my life I ordered a side of their biscuits and gravy…..BEST THING ON THE MENU. The sausage was to die for and the gravy was so close to the gravy my mom used to make for me….the biscuits were herbed and they were the perfect combination of crunchiness and softness.<span style="mso-spacerun: yes;"> </span></div><div class="MsoNormal"><br />
</div><div class="MsoNormal">By the time we ordered our appetizers I was extremely full, but I ordered something anyways so I could take it home.<span style="mso-spacerun: yes;"> </span>Almost everyone seemed to ordered the famous Reuben sandwich, I ordered the seitan gyro, there were some typical breakfast foods ordered (since it was brunch time), and my mom ordered the country fried steak and mashed potatoes—which I finished up for her at dinner.<span style="mso-spacerun: yes;"> </span>I didn’t get to try the Reuben because they all put dairy cheese on it…but my gyro was to die for as well as my mom’s country fried steak.<span style="mso-spacerun: yes;"> </span>For desert we had the chocolate mousse cake which was very good, but hard to eat after being so full so it currently is sitting in our refrigerator waiting to be eaten.<span style="mso-spacerun: yes;"> </span>My parents even bought me a Chicago Diner tee-shirt which I will be wearing in the near future (as soon as I can find a cute red tank top to wear with my leggings). </div><div class="MsoNormal"><br />

<div class="MsoNormal">Where is there to start...I had the pleasure of receiving three coupons for some <a href="http://coconutbliss.com/">Luna and Larry’s Coconut Bliss</a> ice cream last week.<span style="mso-spacerun: yes;"> </span>I decided to try the Mint Galactica version first.<span style="mso-spacerun: yes;"> </span>AND boy, it was AMAZING.<span style="mso-spacerun: yes;"> </span>I finished this ice cream in three separate sittings.<span style="mso-spacerun: yes;"> </span>It even tasted better than regular mint ice cream.<span style="mso-spacerun: yes;"> </span>I loved the taste of real mint and the addition of dark chocolate in the mix.<span style="mso-spacerun: yes;"> </span>Another great aspect of their products is the fact that the ingredients are all organic.<span style="mso-spacerun: yes;"> </span>I’ve had a hard time with finding ice cream replacements that I actually enjoy, and <a href="http://coconutbliss.com/">Coconut Bliss</a> is so far my absolute favorite.<span style="mso-spacerun: yes;"> </span>I plan on picking up another flavor next week so I’ll definitely be reviewing that in the near future.<span style="mso-spacerun: yes;"> </span>For those of you who haven’t tried it….go pick some up at Whole Foods….NOW….and don’t even wait to get home to try it.<span style="mso-spacerun: yes;"> </span>In fact, open it in the store and start eating it while you check out.<span style="mso-spacerun: yes;"> </span>Not only is it vegan, but it is also gluten free, soy free and low glycemic. There are a total of ten flavors of ice cream: naked almond fudge, pineapple coconut, chocolate peanut butter, naked coconut, dark chocolate, vanilla island, mint galactica, cappuccino, cherry amaretto, and chocolate hazelnut fudge. They also carry two ice cream bar flavors: naked coconut bars and dark chocolate bars...which i've also heard are AMAZING. I am currently writing from Western Illinois University where my boyfriend attends school....sadly, he does not get much of a break due to his basketball season :/ Our night was not to eventful....we watched ESPN until we decided to go to bed....he has a game today :]]] Go Leathernecks!! (even though I am, and always will be a true Commodore fan at heart....what can I say? Black and Gold runs through my veins). Needless to say I won't be doing my cooking or vegan dining out for the next few days, but I will be eating super healthy....I started 2011 with a run that I had planned on being 4 miles, but it's just to cold and windy here so 4 turned into 2.5. Once my hip starts screaming I'm pretty sure that means stop. I know everyone has set their new years resolutions, which hopefully most of us will be able to attain. I myself, have created quite a few....but I have made sure that they are at least attainable. Here it goes:<br />
1. Lose my weight gained from being off the few months I was for surgery.<br />
2. Run my first half marathon...thankfully the surgery will hopefully allow me to do this seeing as how my plans to do so were ruined in 2010.<br />
3. Make this my best year for bowling, for those who don't know I'm a NCAA collegiate athlete at Vanderbilt....my sport: bowling :]<br />
4. Starting studying for the LSAT...now<br />
5. Get a paid internship at a law firm this summer....hopefully I'll have the opportunity to do so.<br />
6. Make some new friends :]<br />
7. Write my book I've been planning on finishing...started...but definitely needs a lot of work.<br />
8. Give back to the youth community...do some community outreach for youth bowlers and athletes alike.<br />
9. Make some more vegan friends...at school, in Chicago, and in the blogosphere.<br />
10. Get more active with my church this semester....with the surgery last semester I was lacking in my spiritual self, but I really need to get back to it...i sense the emptiness.<br />
11. Keep making and keep achieving goals....cross a few things off my bucket list too :] <br />

I was way to tired to make a huge meal tonight and it was already past my usually eating time of seven. So, I steamed up some asparagus and added some lemon juice, cut up another apple and added some almond butter (if you haven't noticed this is practically my favorite food right now), opened up a can of organic black beans--added some cumin and bay leaves--,and then cooked up some brown rice. It was actually very good and very filling for a quick, unplanned meal. <div><br />

I incorporated some new things into my workout and decided to follow a running plan instead of just winging it everyday at the gym. While I was catching up on my blogs this morning I was reading <a href="http://www.katheats.com/kerf-favorites/run-kerf-run/">Kathy Eats Real Food</a>, who I highly recommend following if don't. In her blog about running she has a half-marathon plan that she used so I decided to modify to my recovery and own plans for a marathon. My workout was ecstatic I'm still smiling from how happy I am...after my workout I decided to give Amazing Grass a try and it actually isn't to bad at all...it's a little rich though, maybe next time I'll add some extra rice milk. I added the packet to my after workout smoothie of banana, rice milk, and some raw oats. I also had another apple with almond butter and some steamed carrots and green beans.<br />

Every morning I've made a fruit smoothie after my workout. This week I've usually just been using frozen bananas, strawberries, mangos, and pineapple with some coconut water. But today I was a little extra hungry so I had a piece of spelt toast with some almond butter, and an apple that didn't make it past the knife. I've been limiting my carb intake, but when I do enjoy them I make sure their whole grains or something like quinoa. I've also been eating a ton of steamed veggies and fruits. I'm pretty sure I've gone through 2 bags of Trader Joe's asparagus and 2 bags of fuji apples and it's only Wednesday.<br />
<br />
On another note, the working out has been a little disappointing, which is to be expected I guess. Before surgery I was running nonstop for miles but now I'm having a hard time completing just 1.5 miles without needing to take a break due to all of the muscle loss in my legs. I've decided that this is definitely going to be an experience for the next few months. I'll be making something from one of my new cookbooks I got for Christmas tonight for dinner, so hopefully you'll be looking forward to another post today.<br />

BTW i picked up a packet of the <a href="http://amazinggrass.com/">chocolate amazing grass</a> that was recommended by <a href="http://lovinlivinvegan.blogspot.com/">livinlovinvegan</a> when I went to <a href="http://www.fruitfulyield.com/">Fruitful Yield</a> the other day...I still have yet to try it because I'm out of hemp milk but I'm definitely looking forward to it as soon as i get to Whole Foods.<br />

Now that I'm officially going to be 10 weeks out of surgery this coming Tuesday and I've started hitting the gym a bit more and slowly getting back into bowling I've decided I might as well start my training and super healthy eating a few weeks early. Before I found out I would be forced to have injury related hip surgery I was training for a half marathon and eating a raw vegan diet. Sadly, I have found it extremly hard to eat raw while at school, so I must opt for eating a very healthy plant filled vegan diet while at school. Tomorrow marks my first official day of training for the marathon and getting back into full athlete shape. I CAN'T WAIT. I've missed running, boxing, and lifting so much. So, for my last not so healthy meal for awhile I decided to feast on a large piece of homemade vegan pumpkin pie that I made for Christmas as well as some steamed asparagus, a mixture of tangerines, apples, and a banana alongside <a href="http://www.theppk.com/2010/11/doublebatch-chickpea-cutlets/">Isa's Chickpea cutlets</a>...which I recently saw over at <a href="http://lovinlivinvegan.blogspot.com/">livinlovinvegan</a>.<br />

So, after parousing the vegan recipe websites I came across a few on VegWeb that had some good reviews...i decided to pick <a href="http://vegweb.com/index.php?topic=12363.0">The Ultimate PMS Chocolate Cake</a>...mainly because it was quick and easy and I was on a time constraint to get to running. Anyways....after taking it out of the oven and testing it sans frosting I wasn't very impressed. This cake is very dense, not fluffy, and it isn't sweet enough for my taste buds, I personally wouldn't recommend making it.<br />

<u>Pumpkin Date Muffins</u><br />
2 c dates, chopped<br />
1 1/2 c whole wheat flour<br />
1/4 c corn meal<br />
3/4 c granulate sugar (i substituted agave, you can also use brown rice syrup)<br />
1 t baking soda<br />
1/4 t baking powder<br />
1/2 t ground cinnamon<br />
1/2 t ground ginger<br />
1/4 t ground cloves<br />
1 c canned pumpkin puree<br />
5 T apple sauce<br />
2 t grated orange zest (i leave this out occassionally)<br />
3 T. water<br />

1. Preheat oven to 350. Lightly coat muffin pans with vegetable oil spray.<br />
2. In bowl mix dry ingredients then add dates.<br />
3. In separate bowl mix wet ingredients. Then add to the dry using the muffin method to combine.<br />
4. Bake until tester inserted in center comes out clean. I've found it usually takes between 10-15 minutes depending on the type of oven. <br />

I made some baked broccoli alongside a new item I've never seen before at whole foods...the broccoli was amazing (maybe I'm just biased against broccoli seeing as how it is my favorite veggie; also, there are so many different way's to make broccoli enjoyable). Alongside the broccoli I enjoyed the Vegan Cranberry Quinoa Loaf from Whole Foods. This product tastes just like the Tofurky Celebration roast, but a little sweeter. I highly reccomend picking it up...seeing as how I'll be the only vegan attending our Thanksgiving feast of 50+ I decided to just pick up half a loaf on Wednesday instead of buying a whole Tofurky. It was real simple to prepare it...it comes cold so I just threw it in the oven for a few minutes to warm it up. <div><br />

The best thing I like about chili is that you can be SO creative with it...usually when I make it I use the same recipe but add different types of beans (i usually have about 9-10), daikon, carrots, and sometimes other miscellaneous veggies. Needless to say chili is definitely a must have in any vegan cookbook or recipe box. Climate Connections has a "fairesque" with each club setting up their own booth. Today, we had another Climate Connections, which was set up by Vanderbilt SPEAR, or Students Promoting Environmental Awareness and Responsibility. Awesomely, they asked VIVA to set up a booth...which of course we were PUMPED to do. We decided to try out our vegan form of beer pong, which we righteously deemed Veg Pong. Instead of SOLO cups, Naty Light, and Ping Pong balls we decided to use recycled cups, Almond Breeze milk, and Trader Joe-Joe's candy cane oreos...the idea was awesome at first until we realized people would rather just eat the oreos (which I highly recommend going and picking up a box...NOW, they are SO addicting). Needless to say the veg pong was not as quite of a hit as we expected it to be, but at least the oreos and milk brought people to the booth. <br />
<div>The other clubs represented were the Interfaith Council, Vanderbilt American Red Cross, <a href="http://studentorgs.vanderbilt.edu/spear/">SPEAR</a>, and <a href="http://studentorgs.vanderbilt.edu/wilskills/biodiesel.html">Vanderbilt Biodiesel</a>. I learned today about the pretty awesome stuff that Vanderbilt Biodiesel does--they take the left over vegetable oil from all of the cafeterias on campus and create a multi-use soap from the glycerin byproduct, which they call "ecosuds". When my fellow VIVA member Julie and I stopped at the booth we picked up some of the enviro-friendly peppermint soap..I can't wait to use it. </div><div>We also got a chance to meet some fellow veg friends on campus who didn't know VIVA existed...it's always great when I meet a new Vandy veg student whose interested in coming to meetings...hopefully they'll come to the vegetarian dinner next week.<br />

I used it this afternoon with my basmati/brown rice and spices I made and i ate extra slow because I was to busy admiring my beautiful new investment. I guess I should introduce myself. I'm Sarah, a vegan in Nashville, Tennessee. While most college students are enjoying there late night ice-cream, fritos, and chicken ramen; I'm up enjoying dehydrated fruit and snacking on granola.<br />

Veganism isn't all that popular in college, but fortunately living a cruelty free lifestyle has gotten easier over the years. Nashville has tons of restaurants with vegan options, and even fully vegan places to dine. Join me as I learn how to eat a healthy vegan diet while in college. I'll use this blog to share restaurant, recipe, food product, and book reviews; while also trying to make other college vegan lives a lot easier as they join me in my journey.<br />

As a sophomore athlete and student in college I maintain a healthy diet and exercise schedule, and am able to do so while still living a cruelty free lifestyle.
